Description
Tender chicken cooked in a buttery garlic scampi sauce served over rich and creamy garlic parmesan rice for a comforting and flavorful meal.
Ingredients
- 2 chicken breasts, cut into bite-sized pieces
- 2 tablespoons olive oil
- 3 tablespoons butter
- 4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 cup chicken broth
- 1/4 cup lemon juice
- Salt and black pepper to taste
- 1 teaspoon Italian seasoning
- Fresh parsley, chopped (for garnish)
- 1 cup long-grain rice
- 2 cups chicken broth (for rice)
- 1/2 cup grated parmesan cheese
- 2 tablespoons butter (for rice)
- 1/4 cup milk or cream
Instructions
- Rinse the rice and cook it with chicken broth according to package instructions.
- Once cooked, stir in butter, parmesan cheese, and milk until creamy. Set aside.
- Season chicken pieces with salt, pepper, and Italian seasoning.
- Heat olive oil in a skillet over medium-high heat.
- Add chicken and cook for 5–6 minutes until golden and cooked through. Remove and set aside.
- In the same skillet, melt butter and sauté garlic and red pepper flakes for 1 minute.
- Add chicken broth and lemon juice, simmer for 2–3 minutes to reduce slightly.
- Return chicken to the skillet and toss to coat in the sauce.
- Cook for another 2–3 minutes until everything is well combined.
- Serve chicken scampi over garlic parmesan rice and garnish with parsley.
Notes
- Use freshly grated parmesan for best flavor and texture.
- Add shrimp along with chicken for a mixed scampi variation.
- Adjust lemon juice to taste for more or less tanginess.
- For extra creaminess, add a splash of heavy cream to the sauce.
- Store leftovers in the fridge for up to 3 days.
