Description

Tender chicken cooked in a buttery garlic scampi sauce served over rich and creamy garlic parmesan rice for a comforting and flavorful meal.


Ingredients

  • 2 chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 3 tablespoons butter
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup chicken broth
  • 1/4 cup lemon juice
  • Salt and black pepper to taste
  • 1 teaspoon Italian seasoning
  • Fresh parsley, chopped (for garnish)
  • 1 cup long-grain rice
  • 2 cups chicken broth (for rice)
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons butter (for rice)
  • 1/4 cup milk or cream


Instructions

  1. Rinse the rice and cook it with chicken broth according to package instructions.
  2. Once cooked, stir in butter, parmesan cheese, and milk until creamy. Set aside.
  3. Season chicken pieces with salt, pepper, and Italian seasoning.
  4. Heat olive oil in a skillet over medium-high heat.
  5. Add chicken and cook for 5–6 minutes until golden and cooked through. Remove and set aside.
  6. In the same skillet, melt butter and sauté garlic and red pepper flakes for 1 minute.
  7. Add chicken broth and lemon juice, simmer for 2–3 minutes to reduce slightly.
  8. Return chicken to the skillet and toss to coat in the sauce.
  9. Cook for another 2–3 minutes until everything is well combined.
  10. Serve chicken scampi over garlic parmesan rice and garnish with parsley.

Notes

  • Use freshly grated parmesan for best flavor and texture.
  • Add shrimp along with chicken for a mixed scampi variation.
  • Adjust lemon juice to taste for more or less tanginess.
  • For extra creaminess, add a splash of heavy cream to the sauce.
  • Store leftovers in the fridge for up to 3 days.
