Ingredients

  • 2 boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1 cup pineapple juice
  • 2 cups cooked white rice
  • 1 tablespoon vegetable oil
  • 1/2 cup bell pepper, diced
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon grated ginger
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 2 green onions, sliced (for garnish)


Instructions

  1. Cook the rice according to package instructions and set aside.
  2. Heat vegetable oil in a large skillet over medium heat.
  3. Add the chicken pieces and cook for 5–7 minutes until browned and cooked through.
  4. Add diced onion, bell pepper, and garlic, and sauté for 2–3 minutes until softened.
  5. Stir in pineapple chunks, pineapple juice, soy sauce, brown sugar, and grated ginger. Simmer for 5 minutes.
  6. In a small bowl, mix cornstarch with water to create a slurry.
  7. Pour the slurry into the skillet and stir until the sauce thickens.
  8. Serve the pineapple chicken over cooked rice.
  9. Garnish with sliced green onions and serve warm.

Notes

  • Fresh pineapple provides the best flavor, but canned pineapple works well too.
  • You can add vegetables like broccoli, carrots, or snap peas for extra nutrition.
