Ingredients
- 2 boneless skinless chicken breasts, cut into bite-sized pieces
- 1 cup pineapple chunks (fresh or canned, drained)
- 1 cup pineapple juice
- 2 cups cooked white rice
- 1 tablespoon vegetable oil
- 1/2 cup bell pepper, diced
- 1/2 cup onion, diced
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon brown sugar
- 1 teaspoon grated ginger
- 1 tablespoon cornstarch
- 2 tablespoons water
- 2 green onions, sliced (for garnish)
Instructions
- Cook the rice according to package instructions and set aside.
- Heat vegetable oil in a large skillet over medium heat.
- Add the chicken pieces and cook for 5–7 minutes until browned and cooked through.
- Add diced onion, bell pepper, and garlic, and sauté for 2–3 minutes until softened.
- Stir in pineapple chunks, pineapple juice, soy sauce, brown sugar, and grated ginger. Simmer for 5 minutes.
- In a small bowl, mix cornstarch with water to create a slurry.
- Pour the slurry into the skillet and stir until the sauce thickens.
- Serve the pineapple chicken over cooked rice.
- Garnish with sliced green onions and serve warm.
Notes
- Fresh pineapple provides the best flavor, but canned pineapple works well too.
- You can add vegetables like broccoli, carrots, or snap peas for extra nutrition.
