Ingredients

  • 2 large chicken breasts (boneless, skinless)
  • 1/2 cup breadcrumbs (preferably panko)
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1 egg
  • 1 tablespoon milk
  • 2 tablespoons olive oil or melted butter


Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
  2. Pound the chicken breasts to an even thickness to ensure even cooking.
  3. In a shallow bowl, whisk together the egg and milk.
  4. In another bowl, combine breadcrumbs, Parmesan cheese, garlic powder, paprika, oregano, salt, and black pepper.
  5. Dip each chicken breast into the egg mixture, allowing excess to drip off.
  6. Coat the chicken in the breadcrumb mixture, pressing gently so the coating sticks well.
  7. Place the coated chicken breasts on the prepared baking sheet and drizzle lightly with olive oil or melted butter.
  8. Bake for 18–22 minutes or until the chicken is cooked through and the coating is crispy and golden brown (internal temperature should reach 165°F / 74°C).
  9. Let the chicken rest for a few minutes before serving.

Notes

  • Panko breadcrumbs create a crispier texture than regular breadcrumbs.
  • For extra flavor, add a pinch of chili flakes or Italian seasoning to the coating.
